Mushroom - Pork - Pecan Stuffed Delicata

Cut Delicata in half lengthwise, remove seeds and strings. Put into a pan with ½ inch of water, cut side down, and bake at 375 for 50 minutes.

Meanwhile, sauté 1 pound cubed pork in peanut oil. Add 1 cubed onion, 3 chopped celery stalks and 1 pound sliced mushrooms for 15 minutes. Season with Marjoram and Thyme. Add ½ cup chicken stock and 1 cup toasted and chopped pecans. Add 4 cups of small bread cubes until moisture is absorbed.

Remove squash, flip over, and mound filling in the squash cavities. Cover with foil and bake at 350 for 1 hour or until squash is tender. Remove foil and bake another 20 minutes. Let settle and serve.
